It's Gheelicious

It's the weekend, and that means cooking experiments!

PeterE and I were going to work on Mozzarella cheese this weekend, but weren't able to make that work. We'll try for next weekend instead.

I'm settling for a naan attempt and am making ghee to go along with it. Ghee is just browned butter as I understand it. You heat butter until it boils, then you wait for it to stop boiling, then you heat it until it turns golden, froths a bit, and your apartment smells like croissants. I'm not kidding. Roasting the milk proteins (which is what you're doing) smells like croissants and it is awesome. You just pour off the liquid and you've got some ghee.

I didn't actually get any pictures of the naan, but I can tell you that I made it a bit too crispy, and something was missing in the flavor. I haven't figured it out. Also, as good as the ghee smelled, I didn't really feel it added to the naan all that much and preferred regular butter.
